Coconut-Almond Chocolate Chip Squares

These remind me of Almond Joy-flavored Blondies (aka Brownies but without the Cocoa-powder)! This trio of flavors/ingredients: shredded coconut + chopped almonds +chocolate chips is a favorite of mine. Whenever I have the choice, I'll always gravitate towards products with this amazing flavor combination! These soft, delicate squares are the perfect bite-sized treat to enjoy with a glass of milk!

Ingredients
  

  • 1 egg
  • 3 tbsp salted butter, softened
  • 1/2 tsp vanilla extract
  • 2 cups almond flour
  • 1/2 cup sweetened, shredded coconut flakes
  • 1/2 cup dark brown sugar
  • 2 tbsp pure maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup dark chocolate chips
  • 1/2 cup almonds, roughly chopped

Method
 

  1. Preheat oven to 375 degrees F. Spray an 8 x 8-inch baking pan with non-stick cooking spray. Line the pan with parchment paper.
  2. In an electric mixture (or in a large mixing bowl with hand mixer), beat the egg first. Then add the softened butter and vanilla extract and mix together.
  3. Add the almond flour, shredded coconut, brown sugar, maple syrup, baking powder, baking and baking soda; and beat until well combined.
  4. Fold in the dark chocolate chips and chopped almonds.
  5. The mixture should be "dough-like". Press the mixture into the parchment-lined baking pan.
  6. Bake for about 15 minutes; or until edges are slightly browned.
  7. Once done, let cool completely. Then holding the excess parchment paper, lift it out of the pan and onto a flat surface. Cut into 16 squares. (2 per serving)
