Coconut-Almond Chocolate Chip Squares

These remind me of Almond Joy-flavored Blondies (aka Brownies but without the Cocoa-powder)! This trio of flavors/ingredients: shredded coconut + chopped almonds +chocolate chips is a favorite of mine. Whenever I have the choice, I'll always gravitate towards products with this amazing flavor combination! These soft, delicate squares are the perfect bite-sized treat to enjoy with a glass of milk!

Ingredients
  

  • 1 egg
  • 3 tbsp salted butter, softened
  • 1/2 tsp vanilla extract
  • 2 cups almond flour
  • 1/2 cup sweetened, shredded coconut flakes
  • 1/2 cup dark brown sugar
  • 2 tbsp pure maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup dark chocolate chips
  • 1/2 cup almonds, roughly chopped

Instructions
 

  • Preheat oven to 375 degrees F. Spray an 8 x 8-inch baking pan with non-stick cooking spray. Line the pan with parchment paper.
  • In an electric mixture (or in a large mixing bowl with hand mixer), beat the egg first. Then add the softened butter and vanilla extract and mix together.
  • Add the almond flour, shredded coconut, brown sugar, maple syrup, baking powder, baking and baking soda; and beat until well combined.
  • Fold in the dark chocolate chips and chopped almonds.
  • The mixture should be "dough-like". Press the mixture into the parchment-lined baking pan.
  • Bake for about 15 minutes; or until edges are slightly browned.
  • Once done, let cool completely. Then holding the excess parchment paper, lift it out of the pan and onto a flat surface. Cut into 16 squares. (2 per serving)
