Coconut-Almond Chocolate Chip Squares
These remind me of Almond Joy-flavored Blondies (aka Brownies but without the Cocoa-powder)! This trio of flavors/ingredients: shredded coconut + chopped almonds +chocolate chips is a favorite of mine. Whenever I have the choice, I'll always gravitate towards products with this amazing flavor combination! These soft, delicate squares are the perfect bite-sized treat to enjoy with a glass of milk!
Ingredients
- 1 egg
- 3 tbsp salted butter, softened
- 1/2 tsp vanilla extract
- 2 cups almond flour
- 1/2 cup sweetened, shredded coconut flakes
- 1/2 cup dark brown sugar
- 2 tbsp pure maple syrup
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup dark chocolate chips
- 1/2 cup almonds, roughly chopped
Instructions
- Preheat oven to 375 degrees F. Spray an 8 x 8-inch baking pan with non-stick cooking spray. Line the pan with parchment paper.
- In an electric mixture (or in a large mixing bowl with hand mixer), beat the egg first. Then add the softened butter and vanilla extract and mix together.
- Add the almond flour, shredded coconut, brown sugar, maple syrup, baking powder, baking and baking soda; and beat until well combined.
- Fold in the dark chocolate chips and chopped almonds.
- The mixture should be "dough-like". Press the mixture into the parchment-lined baking pan.
- Bake for about 15 minutes; or until edges are slightly browned.
- Once done, let cool completely. Then holding the excess parchment paper, lift it out of the pan and onto a flat surface. Cut into 16 squares. (2 per serving)
