Banana Bread with Hazelnut Chocolate Drizzle

Liz Jalkiewicz, RDN, LDN
Banana Bread is just one of those all time comfort foods. Add some hazelnut chocolate drizzled over top and now we're talking. I cut back on the sugar a bit in this banana bread recipe with only 1/2 cup total so I could compensate for adding the chocolate drizzle on top. In the end, we're all balanced out! Enjoy!

Ingredients

  • 3 ripe bananas, peeled and smashed
  • 1/3 cup melted butter, preferably unsalted
  • 1 tsp baking soda
  • 1/2 cup sugar
  • 1/8 tsp salt
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup hazelnut chocolate spread, like Nutella®

Instructions

  • Preheat oven to 350 degrees F and spray 4 mini loaf pans with non-stick cooking spray.
  • In an electric mixer (or a mixing bowl), mash up the bananas until completely smooth. Add in the melted butter and mix until well combined.
  • Stir in the baking soda and salt.
  • Next, add in the sugar, egg and vanilla extract to the bowl.
  • Gradually add in the flour while mixing all the ingredients together.
  • Pour the batter into the mini loaf pans and bake for about 25-30 minutes (or until toothpick comes out clean in the center of the loaf). Since they are mini loaf pans, they won't take as long to cook as traditional banana bread.
  • Once it's done, allow to cool for a few minutes before removing it from the mini loaf pan.
  • In a microwave safe bowl, melt the Nutella® in the microwave for about 30 seconds.
  • Dip a fork into the bowl of Nutella® and then drizzle the chocolate overtop the banana bread. Slice it up and enjoy!
