My husband especially loved this dish. Mostly because of the bacon…  Sometimes a little bit of the real thing goes a long way! As the saying goes, we eat with our eyes first. And this quiche will definitely get your mouth-watering when you see the crispy, crumbled bacon sprinkled across the top of this quiche.

This dish is great to enjoy for breakfast or brunch on the weekend (or you can make it ahead; and enjoy it during the week for a quick breakfast on those busier mornings).

Ingredients Method

Ingredients
  

  • 6 eggs
  • 1/2 cup 1% milk
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp ground nutmeg (aka just a pinch!)
  • 2 cups fresh broccoli, roughly chopped, steamed or boiled
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Romano or Parmesan cheese
  • 6 slices center cut bacon, cooked (and crispy)

Method
 

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a medium bowl, whisk the eggs, milk, salt, pepper and nutmeg together.
  3. In an 8-inch baking dish, add the broccoli and pour the whisked egg mixture over top.
  4. Sprinkle the three cheeses over the baking dish. And with a fork, gently mix the ingredients together so the cheese gets dispersed throughout the quiche.
  5. Roughly chop the cooked, crispy bacon to create crumbled pieces. Sprinkle crumbled over the top of the quiche.
  6. Bake for 30-40 minutes, or until it's puffed in the center and a knife inserted in the center comes out clean.
  7. Let cool slightly and enjoy!
