Preheat oven to 375 degrees F. Spray an 8 x 8-inch baking pan with non-stick cooking spray. Line the pan with parchment paper.
In an electric mixture (or in a large mixing bowl with hand mixer), beat the egg first. Then add the softened butter and vanilla extract and mix together.
Add the almond flour, shredded coconut, brown sugar, maple syrup, baking powder, baking and baking soda; and beat until well combined.
Fold in the dark chocolate chips and chopped almonds.
The mixture should be "dough-like". Press the mixture into the parchment-lined baking pan.
Bake for about 15 minutes; or until edges are slightly browned.
Once done, let cool completely. Then holding the excess parchment paper, lift it out of the pan and onto a flat surface. Cut into 16 squares. (2 per serving)
